Creamy Curried Chickpea Soup
This Chickpea Soup is an easy, flavour-packed dinner you can have on the table in just 20 minutes. Made with simple pantry spices, creamy coconut and fibre-rich chickpeas, this wholesome soup is comforting, nourishing and surprisingly satisfying. The onions and spices are gently cooked to unlock maximum flavour, the chickpeas are partially blended for a naturally creamy texture, and fresh spinach is stirred through at the end for extra goodness. Finished with crunchy homemade croutons.
