If you’ve been anywhere near food TikTok in the last year, you already know about Dubai chocolate. The viral treat — originally created by Fix Dessert Chocolatier in Dubai — is a thick chocolate bar filled with pistachio cream and knafeh (crispy shredded pastry). It went completely global after a viral video racked up millions of views, and ever since, everyone has been making their own version at home.
This is mine. And it’s become one of the most-made things in my kitchen. Instead of knafeh, I use crushed shredded wheat — it’s easy to find, budget-friendly, and gives that same incredible crunch. Combined with medjool dates as the base (no chocolate shell needed), it’s a genuinely healthier take on the Dubai chocolate bar that still hits every flavour note.

Tips & Hacks
- Use soft medjool dates — if they are straight out the fridge I like to microwave for 20-30 secs, this will make them softer.
- Crush the shredded wheat finely so the mixture holds together and spreads evenly.
- Don’t rush the rolling step — an even date layer means clean, neat pieces when you break the bark apart
- Overnight in the freezer gives you the most satisfying snap. So worth the wait.
- For a touch of extra flavour, add a pinch of flaky sea salt on top of the chocolate before freezing.

Swaps
No pistachio butter? Almond butter or cashew butter both work well. For a nut-free version, try sunflower seed butter or tahini.
Want to make it gluten-free? Swap the shredded wheat for puffed rice or crushed rice cakes — same crunch, totally GF.
Add-ins that work beautifully: a handful of chopped pistachios pressed into the chocolate before freezing, or a drizzle of white chocolate on top for a Dubai-chocolate-inspired look.
Storage

Healthy Dubai Chocolate Bar

- 12 medjool dates
- 60 g dark chocolate, 70%+ recommended
- 70 g pistachio butter
- 2 nests of shredded wheat
Instructions
- Place the shredded wheat in a bowl and crush into fine crumbs using your hands. Really get in there — you want a fine, even texture.
- Add the pistachio butter and mix until fully combined. Your hands will do a better job than a spoon for an even coating.
- Pit the dates and open them out flat.
- Lay a large sheet of parchment paper on your work surface. Arrange the opened dates closely together, touching, so they form one compact layer.
- Place a second sheet of parchment on top and use a rolling pin to flatten the dates into an even slab — it should roughly double in size. Remove the top sheet.
- Spread the pistachio and shredded wheat mixture evenly over the date layer.
- Melt the dark chocolate in the microwave in short bursts, stirring between each one. Pour over the top and spread gently to cover everything.
- Transfer the parchment (with everything on it) onto a freezer-safe tray.
- Freeze for at least 30 minutes for a quick set, or overnight for a firm, snappable bark.
