3 Brunch Ideas To Make This Weekend

Florencia Baldini Florencia Baldini Last Updated on June 12, 2026

Brunch has to be one of my favourite meals of the day. It’s that perfect in-between meal where you can take your time, enjoy something a little more special than your usual breakfast, and still keep things simple and nourishing.

If you’re stuck in a brunch rut or always end up making the same thing every weekend, I’ve got you covered. These three brunch ideas are easy to make, packed with flavour, and made with wholesome ingredients that will keep you satisfied for hours. Whether you’re hosting friends, treating family to a leisurely weekend meal, or simply enjoying a slow morning for yourself, there’s something here for everyone.

What I love most about these recipes is that they feel a little bit indulgent while still being balanced and nourishing. They use simple ingredients, don’t require any fancy equipment, and are perfect for sharing. From savoury options to something a little sweeter, these are the kinds of recipes that make brunch feel special without spending all morning in the kitchen.

So grab a coffee, take your time, and let’s make brunch something to look forward to.

The Menu

You’re my guest for brunch, and this is what I’m serving:

Shakshuka with feta and harissa

Whipped ricotta on toast with cherry compote

Halloumi & avocado on toast with hot honey

Whipped Ricotta on Toast with Cherry Compote
Whipped ricotta on toast with cherry compote is the ultimate fuss-free brunch that looks like it belongs on a café menu. Ready in 15 minutes, high in protein from the ricotta, and topped with a glossy cherry compote that adds natural fibre and a beautiful pop of colour. Spread it simply for a relaxed weekend breakfast, or pipe it for a show-stopping finish that requires almost no extra effort.

Halloumi & Avocado on Toast with Hot Honey
Halloumi and avocado on toast with hot honey is the kind of brunch that looks seriously impressive but comes together in under 15 minutes. Golden, crispy halloumi paired with creamy avocado and a drizzle of sweet, spicy hot honey — it's salty, rich, a little fiery, and completely addictive. High in protein and healthy fats, this is a brunch that actually keeps you full.

Healthy One-Pan Shakshuka (Easy Brunch Idea)
Shakshuka is a rich, spiced tomato and pepper sauce with eggs poached right in the pan — a one-pan brunch that is warming, deeply satisfying, and ready in about 20 minutes. Packed with vitamins, antioxidants, and protein, it's as nourishing as it is delicious. A true crowd-pleaser that uses mostly store cupboard ingredients and costs very little to put together.
