What you need

For one slice of toast you’ll want a thick slice of crusty sourdough, one egg, two tablespoons of cottage cheese, one tablespoon of harissa (rose harissa if you can find it), and half a ripe avocado. To finish, a small handful of chopped chives and a thin drizzle of raw honey.

How each ingredient works for you

Sourdough. Naturally fermented bread is easier on digestion and tends to keep blood sugar steadier than standard sliced bread. Go for a proper bakery loaf with a real crust — the chew matters here.

Cottage cheese. The quiet hero of this toast. It’s packed with protein and brings a cool, tangy creaminess that feels indulgent without being heavy. A full-fat version with no added gums or starches gives you the best texture.

Harissa. A North African chilli paste built around peppers, garlic, and warm spices. It adds smoky depth, gentle heat, and a real wake-up factor — chillies are also linked to a small metabolism boost and are full of antioxidants.

Avocado. Creamy, satisfying, and full of the kind of healthy fats that keep you full for hours. Slice it thin instead of mashing so each bite has a bit of structure.

Egg. Real, lasting protein and a runny yolk that doubles as a built-in sauce. Choline and B vitamins in the yolk help with focus and energy through the morning.

Ingredients
  

  • 1 slice of seeded sourdough bread
  • 1 egg
  • 2 tbsp cottage cheese
  • 1 tsp rose harissa paste, (I use Belazú)
  • ½ avocado
  • drizzle honey
  • Optional: chives, chopped

Instructions
 

  • Toast the bread until golden and crisp. (I air-fry mine at 180°C for 5 minutes.)
  • Make the harissa egg. Spoon a teaspoon of harissa paste into a small non-stick pan and swirl it into a circle. Place over medium heat. Once it starts sizzling, crack an egg into the centre. Cover with a lid and cook for 2–3 minutes, until the whites are set and the yolk is still runny. *The lid helps the top cook through without burning the bottom.*
  • Assemble. Spread cottage cheese over the toast, layer with sliced avocado, and top with the egg.
  • Finish with a drizzle of honey— don’t skip it, this is what ties everything together. Scatter with chives if using.
