This Greek chicken bowl is ideal for meal prep and one of those meals that actually tastes just as good — if not better — the day after. The flavours have time to settle, the chicken stays lemony, and the roasted vegetables hold their texture beautifully. We often enjoy this bowl cold straight from the fridge, making it perfect for busy days, packed lunches or an easy grab-and-go meal. Just store the chicken, vegetables and dressing separately, then assemble when you’re ready for a fresh, satisfying and nourishing meal with zero effort.
How To Make The Air Fryer Greek Chicken Bowl
Step 1: Marinate the Chicken
Add the chicken to a bowl along with the olive oil, lemon juice, oregano, paprika, grated garlic, salt and pepper. Mix really well so the chicken is evenly coated on all sides. If you have the time, leave it to marinate for 15–30 minutes to allow the flavours to develop, but it will still be delicious if cooked straight away.

Step 2: Prepare the Vegetables
Chop the vegetables: peppers, onion and potatoes.
Add the vegetables to one air fryer basket. Drizzle with olive oil, season with salt and pepper, and toss well so everything is evenly coated.
Step 3: Load the Air Fryer
Place the marinated chicken into the second air fryer basket, spreading it out in a single layer.
Set the air fryer to 200°C and use the SYNC function so the chicken and vegetables finish cooking at the same time, even though they have different cooking times.

Step 4: Cook
Cook the vegetables for 17 minutes, giving them a shake halfway through to ensure they cook evenly and get nicely roasted.
Cook the chicken for 12 minutes, turning it once halfway through, until fully cooked and lightly golden.
Step 5: Warm the Pita
For the final 4 minutes of cooking, add the pita bread to the third layer of the air fryer to warm through.

Step 6: Make the Yoghurt Dressing
While everything cooks, mix the Greek yoghurt, lemon juice, olive oil, grated garlic and salt in a small bowl until smooth and creamy.

Step 7: Assemble the Bowl
Slice the cooked chicken and build your bowl with the roasted vegetables, fresh tomatoes, cucumber, olives and warm pita. Finish with a generous drizzle of yoghurt dressing and a sprinkle of fresh herbs before serving.

Tips
- Use chicken thighs for juiciness: Thighs stay incredibly tender in the air fryer, but chicken breast works just as well if you prefer it leaner.
- Don’t overcrowd the baskets: Give the chicken and veg space so they roast rather than steam.
- Warm pita last: Adding it at the end keeps it soft and fluffy, not dry.
- Great for meal prep: Everything keeps well and can be assembled fresh when you’re ready to eat.
Swaps
Chicken: Turkey breast or halloumi work well for a different protein option.
Vegetables: Aubergine, mushrooms or broccoli are great swaps depending on what you have.
Greek yoghurt: Use dairy-free yoghurt for a lactose-free version — just make sure it’s thick.

Storage

Greek Chicken
- 2 chicken breast or thighs
- 1 tbsp olive oil
- 1 lemon, juice
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp fresh garlic, grated

- ½ tsp salt
Roasted Vegetables
- 3 peppers, red and yellow
- 200 g baby potatoes , sliced into 4 cubes
- 1 red onion, chopped into 4
- 1 tbsp olive oil
- salt and pepper
Yoghurt Dressing
- 100 g thick Greek yoghurt
- 1 tbsp tahini
- ¼ tsp salt
- ¼ tsp garlic powder
- 1 tbsp dill, finely chopped
- water, to thin
For the salad
- 1 pita bread
- 40 g feta, crumbled
- 10 Kalamata olives, sliced
- fresh dill
Instructions
- In a bowl, add the chicken, olive oil, lemon juice, oregano, paprika, garlic, salt and pepper. Mix really well until the chicken is evenly coated, then leave to marinate for 15–30 minutes if you have time.
- Add the sliced pepper, red onion and potatoes to one air fryer basket, drizzle with olive oil, season with salt and pepper, and toss to coat.
- Place the chicken in the other basket and cook at 200°C (390°F), using the SYNC function so everything finishes at the same time.
- Cook the vegetables for 17 minutes, giving them a shake halfway through, and the chicken for 12 minutes, turning once.
- For the final 4 minutes, add the pita bread to the third layer to warm through.
- Meanwhile, mix the Greek yoghurt, lemon juice, olive oil, garlic and salt until smooth and creamy.
- Build your bowl with the roasted vegetables, chicken, olives, feta, and warm pita. Finish with a generous drizzle of yoghurt dressing and a sprinkle of fresh herbs.
