Pear & Ginger Crumble

This pear and ginger crumble is naturally sweet, easy to make, and accidentally vegan. Baking the pears brings out their natural sugars, making them soft and jammy with no need for added sweeteners. The warm kick of fresh ginger adds a lovely depth of flavour, perfectly balanced by the crunchy oat and coconut topping.

Everything comes together in one baking tin. First, the pears soften and caramelise, then the crumble is added and baked until golden and crisp. A handful of chopped almonds gives the perfect crunch right at the end.

Serve warm with a scoop of Greek yoghurt for breakfast or enjoy as a cosy dessert. Simple, nourishing, and full of flavour.

Tips

  • The addition of cornflour is very important, it helps turning the pears into a sauce consistency.
  • The riper the pears, the sweeter the crumble. I didn’t add any sugar to this recipe because baking ripe pears naturally transforms them into a deliciously sweet sauce. I usually make this when I forget about pears in the fridge and they turn very soft. While I wouldn’t enjoy eating them at that stage, they’re absolutely perfect for this crumble.

Pear & Ginger Crumble

Ingredients
  

  • 4 pears chopped into small cubes
  • 1 tbsp cornflour
  • 1 tbsp fresh ginger grated

Crumble ingredients

  • 80 g ground oats
  • 20 g rolled oats
  • 30 g coconut oil
  • 1 tsp cinnamon
  • 15 g coconut flakes
  • handful chopped almonds

Instructions
 

  • To a baking tin add: pears, cornflour and ginger.
  • Mix well and bake on a pre-heated oven at 200 for 25-30 mins.
  • Meantime, in a separate bowl add the crumble topping ingredients and mix well until everything is well coated by the coconut oil.
  • Take the baking dish out of the oven and give the pears a mix.
  • Add the crumble topping and return to the oven for further 30 minutes. In this time I opened the oven a couple of time to give the topping a mix so the crumble cooks evenly.
  • 5 minutes before ready add the almonds.
