- Use soft mejool dates: Medjool dates are ideal. If yours are dry, soak them in hot water for 10 minutes before blending.

- Uniform size: Use a small ice cream scoop or a spoon to portion evenly.
- Make it pretty: Roll the finished balls in cacao, shredded coconut, or crushed nuts for a pretty look and extra flavour.

Swaps

Dark chocolate: I always use 70% dark chocolate but if you are not used to high cacao content start with 50-60%.
Cacao powder: Make sure it is the unsweetened. I don’t recommend skipping/swapping this ingredient.
Storage
Fridge: Store in an airtight container for up to 5-7 days.
Freezer: Freeze for up to 2 months. Let them sit at room temperature for a few minutes before eating.

Ingredients
- 120 g almonds ~1 cup
- 200 g soft pitted medjool dates ~6 dates, 1 cup
- 60 g dark chocolate chopped. I have used 70% (or chocolate chips,~1/3 cup)
- 25 g cacao powder 1/4 cup
Instructions
- Add all the ingredients into a food processor and blitz.
- Blitz until the ingredients create a malleable dough.
- Shape into balls (at this point you can roll them into cacao powder, I think they look pretty).
- Refrigerate for a few hours so they harden up a bit (or out in the freezer for 15-20 minutes).
