When the UK reaches 35°C, most of us suddenly remember one important thing… we don’t really have air conditioning! Instead, we have warm kitchens, houses that trap the heat, and very little motivation to stand over the hob.

With temperatures reaching record highs across much of the UK, even making lunch can feel like a workout.

So today I wanted to share six of my favourite lunches that require little to no cooking, are packed with protein, fibre and wholesome ingredients, and most importantly… they’re absolutely buonissimo.

5 Minutes Chicken Lettuce Cups
When every minute counts, these are hard to beat.
Juicy chicken, crunchy vegetables and a creamy dressing wrapped in crisp lettuce leaves make a lunch that's light, fresh and surprisingly filling.
They're perfect for those days when it's simply too hot to think about cooking.

Dates & Butter Beans Salad
This is one of those salads that surprises everyone.
Sweet dates, creamy butter beans, crunchy vegetables and a delicious dressing create the perfect balance of sweetness, freshness and texture. It's naturally high in fibre, packed with plant protein and ideal for meal prep.
The best part? No cooking required.

Sometimes the simplest lunches are the best.
Crunchy crackers topped with smoked salmon, creamy cheese, cucumber and fresh herbs make the perfect light lunch when you don't feel like cooking at all. They're rich in protein, contain omega-3 fats and feel far more special than the effort required.

This has quickly become one of my favourite summer lunches. Everything gets finely chopped into a bowl before being piled onto crunchy toast. It's fresh, colourful, high in protein and incredibly satisfying.
If it's simply too hot to cook chicken, just use ready-cooked chicken breast pieces. It cuts the preparation time almost in half and still makes an incredibly nutritious lunch.

Sardines On Toast – High Protein, Omega-3 & Ready In 10 Minutes
Don't underestimate a tin of sardines.
They are one of the most nutritious foods you can keep in your cupboard and make an incredibly quick lunch. I usually air fry mine until they're crispy, but during a heatwave I simply drain the excess oil and enjoy them straight from the tin on toast with all the toppings.
You'll still get all the protein and omega-3 goodness without heating up the kitchen.
