A Few Tips

Ingredients
  

  • 1 chicken breast, * or cooked chicken
  • 1 avocado
  • 40 g feta
  • 6 kalamata olives
  • 4 sun-dried tomatoes
  • A few pickled onions
  • 1 tsp mayo
  • Fresh dill
  • Salt and pepper
  • 2 slices seeded sourdough
  • Chicken spices:
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ¼ tsp salt

Instructions
 

  • Cook the chicken with a drizzle of oil and the spices. Let it rest for a few minutes (don’t skip this, it keeps it juicy).
  • Add the chicken and everything else to a chopping board. Chop it all together until it’s creamy and combined.
  • Toast the sourdough. Scoop the mixture up onto the toast.

Notes

* If it’s too hot to cook or you’re short on time, simply swap the freshly cooked chicken for ready-cooked chicken. I love using Flame-Grilled Chicken Breast Pieces for a quick, fuss-free lunch that still packs in plenty of protein.
