Why is This Fudge ‘Gut Friendly’?
This 2-ingredient fudge is made with just dates and roasted cashews, both naturally rich in fibre, which supports healthy digestion and feeds the good gut bacteria.
It’s also free from refined sugar, dairy, gluten, and additives — all of which can be harsh on the digestive system.
Sweet, satisfying, and much kinder to your gut than traditional fudge.
Tips
- Important: I always use soft Medjool dates in my recipes – they’re naturally sticky and perfect for blending.
If you’re using a firmer variety, just soak them in warm water for 10-15 minutes to soften. It makes them much easier to blend and gives your fudge a smoother, creamier texture. - Use roasted cashews for the best flavour, but if you only have raw ones, you can lightly toast them in a dry pan to bring out their natural sweetness.
- Add a pinch of salt – it might sound simple, but it really enhances the flavour and gives that sweet-salty fudge vibe.
- Chill the mix before shaping – a quick 10–15 minutes in the freezer helps firm it up, making it easier to cut or roll.
- Shape into cubes or balls – balls are quicker, but cubes give it that classic fudge look. You could also press it into a lined tin and slice into squares.
Storage
Store the fudge in an airtight container in the fridge for up to 4 days.
Freezer: You can also freeze them for up to 1 month — just let them sit at room temperature for a few minutes before eating so they soften slightly.

Ingredients
- 120 g of pitted dates
- 120 g roasted cashews
Instructions
- Add the ingredients into a food processor and blitz until they reach a smooth consistency. A little and simple trick to enhance the flavour is to add a pinch of salt. I really recommend it.
- Transfer to a small tub and leave in the freezer for 10-15 mins so the mix has time to go a bit firmer (you can skip this bit but I feel it helps with the shaping part).
- Divide the fudge into 8 parts and shape into your preferred shape. I went for a cube shape to resemble the typic fudge shape but you can make also balls (which will save you a bit of time as it is much quicker to make balls than cubes).
