This 2-ingredient date fudge is a healthier take on the classic treat, made with simple, natural ingredients. It’s sweet, chewy, and has a delightful caramel-like flavour—all thanks to the dates.
Roasted cashews add richness and texture, while a pinch of salt enhances the flavour beautifully. Shaped into cubes or rolled into balls, this vegan, gluten-free, and refined sugar-free fudge is perfect for a quick snack or dessert.
With just a food processor and a few minutes of your time, you’ll have a gut-friendly treat that’s as satisfying as it is nourishing.

2-Ingredient Gut-Friendly Fudge
Ingredients
- 120 g of pitted dates
- 120 g roasted cashews
Instructions
- Add the ingredients into a food processor and blitz until they reach a smooth consistency. A little and simple trick to enhance the flavour is to add a pinch of salt. I really recommend it.
- Transfer to a small tub and leave in the freezer for 10-15 mins so the mix has time to go a bit firmer (you can skip this bit but I feel it helps with the shaping part).
- Divide the fudge into 8 parts and shape into your preferred shape. I went for a cube shape to resemble the typic fudge shape but you can make also balls (which will save you a bit of time as it is much quicker to make balls than cubes).
