Healthy 5-Ingredient No-Bake Carrot Cake Bites

These delicious energy balls made with just 5 wholesome ingredients, come together in minutes, and taste like a treat, even though they’re naturally sweetened and packed with goodness. I love how easy these are to make – no oven, no flour, no fuss. All you need is a food processor and a few cupboard staples. The texture is soft, chewy and satisfying, with just the right amount of sweetness from the dates and a gentle spice from the cinnamon.

They’re rich in fibre and healthy fats from the almonds and coconut, making them a perfect snack to support gut health and keep you full for longer. And because they store so well in the freezer, they’re ideal for meal prep or for keeping in your freezer stash when you need a quick bite. Tips

  • Use soft Medjool dates for best texture and sweetness. If using regular dates, soak them in warm water for 10 mins first.
  • A pinch of salt really lifts the flavour and balances the sweetness — don’t skip it!
  • No food processor? Try using ground almonds and grated carrot, then mix by hand (texture will be slightly different but still works).
  • Roll in shredded coconut, crushed nuts, or even cocoa powder to mix things up.

Healthy 5-Ingredient No-Bake Carrot Cake Bites

Ingredients
  

  • 1 carrot ~80g
  • 5 medjool dates ~100g
  • 120 g roasted almonds I have roasted mine in the air fryer but you can also use the oven
  • 50 g shredded coconut
  • 1/2 tsp cinnamon
  • Optional: Pinch of salt really recommend it though!

Instructions
 

  • Add roasted almonds and shredded coconut into a food processor and blitz until it creates a sort of butter-like texture.
  • Add the rest of the ingredients and blitz.
  • Spoon the mixture and roll into balls with your hands (if you find it too sticky to roll out in the freezer for 10 minutes, but I didn’t have to).
  • Roll in extra shredded coconut if you like, they look pretty.

I like to store them in the freezer for 2 reason: they last longer
and they don’t freeze but make the perfect consistency to bite.
