Tips
- Roast the almonds: Roasting the almonds brings out their natural oils and adds a deeper flavour — worth the extra step!
- Use soft Medjool dates for best texture and sweetness. If using regular dates, soak them in warm water for 10 mins first.
- A pinch of salt really lifts the flavour and balances the sweetness — don’t skip it!
- No food processor? Try using ground almonds and grated carrot, then mix by hand (texture will be slightly different but still works).
- Roll in shredded coconut, crushed nuts, or even cocoa powder to mix things up.
- Perfect for batch prep — keep in the freezer and grab when needed.
Swaps
Almonds: Use cashews or walnuts for a different nutty flavour, or sunflower seeds for a nut-free version.
Medjool dates: Regular dates work too, just soak them in warm water for 10 minutes to soften.
Shredded coconut: Swap with ground almonds or oat flour if you’re not a fan of coconut (note: texture will change slightly).
Carrot:Try grated sweet potato or parsnip for a fun variation – both work well with cinnamon.
Cinnamon: Use nutmeg, mixed spice or pumpkin spice for a seasonal twist.
Storage
Fridge – Store for up to 7 days in a sealed container. The texture will be softer and more cake-like
Freezer – Store in an airtight container for up to 2 months. They won’t freeze solid, so you can eat them straight from the freezer. This also gives them the perfect chewy texture.

Healthy 5-Ingredient No-Bake Carrot Cake Bites
Ingredients
- 1 carrot ~80g
- 5 medjool dates ~100g
- 120 g roasted almonds I have roasted mine in the air fryer but you can also use the oven
- 50 g shredded coconut
- 1/2 tsp cinnamon
- Optional: Pinch of salt really recommend it though!
Instructions
- Add roasted almonds and shredded coconut into a food processor and blitz until it creates a sort of butter-like texture.
- Add the rest of the ingredients and blitz.
- Spoon the mixture and roll into balls with your hands (if you find it too sticky to roll out in the freezer for 10 minutes, but I didn’t have to).
- Roll in extra shredded coconut if you like, they look pretty.
