Instructions
Add roasted almonds and shredded coconut into a food processor and blitz until it creates a sort of butter-like texture.
Add the rest of the ingredients and blitz.
Spoon the mixture and roll into balls with your hands (if you find it too sticky to roll out in the freezer for 10 minutes, but I didn’t have to).
Roll in extra shredded coconut if you like, they look pretty.

Notes
I like to store them in the freezer for 2 reason: they last longer
and they don’t freeze but make the perfect consistency to bite.
