Beet & Seed Power Loaf
Ingredients
- 1 beetroot grated
- 4 eggs
- 80 g cottage cheese
- 250 g rolled oats
- 40 g walnuts roughly chopped
- 40 g mix seeds
- 2 tbsp nigella
- 2 tsp salt
- 1 tbsp fennel slightly crushed
- 1 tsp garlic powder
- 50 g feta crumbled
Instructions
- Grate the beetroot with a cheese grater
- Add the grated beetroot to a bowl with the cottage cheese and mix.
- Add the rest of the ingredients (a part from the feta) into a bowl an mix until everything is well incorporated.
- Add the crumbled feta and mix gently (you want to keep the feta pieces visible).
- Bake on a pre-heated oven at 200C for 30-40 mins.
- Let it cool down completely before slicing.
