Beet & Seed Power Loaf

Ingredients
  

  • 1 beetroot grated
  • 4 eggs
  • 80 g cottage cheese
  • 250 g rolled oats
  • 40 g walnuts roughly chopped
  • 40 g mix seeds
  • 2 tbsp nigella
  • 2 tsp salt
  • 1 tbsp fennel slightly crushed
  • 1 tsp garlic powder
  • 50 g feta crumbled

Instructions
 

  • Grate the beetroot with a cheese grater
  • Add the grated beetroot to a bowl with the cottage cheese and mix.
  • Add the rest of the ingredients (a part from the feta) into a bowl an mix until everything is well incorporated.
  • Add the crumbled feta and mix gently (you want to keep the feta pieces visible).
  • Bake on a pre-heated oven at 200C for 30-40 mins.
  • Let it cool down completely before slicing.
