It’s made with just a few wholesome ingredients, comes together in minutes, and can be done with or without a blender. The chickpea mix is creamy, zesty, and full of flavour thanks to lemon, parmesan, basil, and a little kick from sriracha. Paired with avocado, sun-dried tomatoes, and good-quality sourdough, it’s a combo that feels both indulgent and good for you.

Best enjoyed fresh. Once the bread is toasted and the toppings are added, it’s not ideal for storing as the bread will go soggy.

Ingredients
  

For the chickpea mix

  • ½ chickpeas
  • 1 tsp oil
  • 15 g grated Parmesan
  • 1 tbsp mayo
  • 1 tbsp sriracha
  • handful of basil leaves
  • 10 g almonds
  • salt to taste
  • Squeeze of 1/4 lemon

For the toast

  • 1 small avocado
  • 6 sundried tomatoes
  • toasted sourdough bread

Instructions
 

  • Add all the chickpea mix ingredients into a bowl and blend, partially and roughly(or add into a blender). *
  • Mash the avocado on a toasted bread and add the chickpea mix.
  • To finish off drizzle some more extra virgin olive oil.

Notes

*You could get a similar result without a blender, if you go this way mash the chickpeas and roughly chop the rest of the ingredients, then add to a bowl and mix (I find the blender much quicker).
