Ingredients
- 1 can chickpeas
- 1 large yellow onion
- 1 tsp curry
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 100 g coconut cream
- 2 handful of spinach
Instructions
- Add the onions and spices to a pan with a bit of oil and cook until the onions are soft.
- Add the stock and chickpeas, and cook for a few minutes (In the meantime make the croutons*)
- Add coconut cream, and cook for a few minutes. With a hand blender, half blend the chickpeas: you want to keep some whole.
- Add the spinach and mix.
- Serve with the croutons on top.
