Amazing Chickpea Soup

Servings 2

Cook Time 15 minutes

Ingredients
  

  • 1 can chickpeas
  • 1 large yellow onion
  • 1 tsp curry
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 100 g coconut cream
  • 2 handful of spinach

Instructions
 

  • Add the onions and spices to a pan with a bit of oil and cook until the onions are soft.
  • Add the stock and chickpeas, and cook for a few minutes (In the meantime make the croutons*)
  • Add coconut cream, and cook for a few minutes. With a hand blender, half blend the chickpeas: you want to keep some whole.
  • Add the spinach and mix.
  • Serve with the croutons on top.
