Prevent your screen from going dark
Instructions
Add the onions and spices to a pan with a bit of oil and cook until the onions are soft.
Add the stock and chickpeas, and cook for a few minutes (In the meantime make the croutons*)
Add coconut cream, and cook for a few minutes. With a hand blender, half blend the chickpeas: you want to keep some whole.
Add the spinach and mix.
Serve with the croutons on top.

*in a bowl add the bread, oil and spices, mix and bake in the oven or air fryer for until golden and super crunchy.
