Swaps
Oats: I used rolled oats but regular flour should also work (I haven’t tried myself)
Olive oil: I have used extra-virgin olive oil but you can swap with avocado oil or any neutral oil.
Cottage cheese: Works best with full-fat for flavour and texture but low-fat also works.
Toppings: Add seeds, chopped nuts or herbs on top before baking for extra crunch and flavour.
Storage
Room temperature: Store the bread wrapped in a clean tea towel or in a bread box for up to 2 days.
Fridge: Keep in an airtight container or wrapped in cling film for up to 4 days.
Freezer: Slice the bread and freeze in a zip-lock bag for up to 3 months. Defrost slices at room temperature or toast directly from frozen.

Cottage Cheese Bread
Ingredients
- 300 g cottage cheese
- 3 eggs
- 1/2 tsp salt
- 110 g rolled oats
- 1 tbsp baking powder
- 30 ml olive oil
Instructions
- To a food processor add all the ingredients and mix. Don’t overmix. You just need the ingredients to blend and mix together and the oats to break down a little. If you overmix it will result in a healthy and doughy bread.
- Pour into a baking tin, 10×20 cm
- Bake at 180C for 40 minutes.
- Let it cool down completely before cutting into slices.
- I highly recommend to add a tiny bit of salted butter and a drizzle of honey on top, the savoury/ sweet contest really make this bread my new favourite cottage cheese recipe!
