Add all the ingredients to a food processor and pulse until just combined. The oats should break down slightly, but avoid over-processing, otherwise the bread will turn out dense and doughy.
Pour the mixture into a lined 10 x 20 cm (4 x 8 inch) baking tin/pan and spread evenly.
Bake at 180°C (350°F) for about 40 minutes, until golden and firm to the touch.
Let it cool down completely before cutting into slices.
I highly recommend topping it with a little salted butter and a drizzle of honey—the savoury-sweet contrast makes this bread my new favourite cottage cheese recipe!
