Tips
- Choose ripe mangoes: For the sweetest, juiciest bites, pick mangoes that give slightly when pressed and have a fragrant aroma.
- Greek yoghurt: Use thick Greek-style yoghurt for creaminess and added protein. If your yoghurt is too runny, try straining it for a thicker coating.
- Coating: Make sure to coat each mango piece evenly with the yoghurt mix so the coconut sticks well — this adds texture and flavour in every bite.
- Freeze spacing: Lay mango pieces apart on the tray to prevent sticking together — this way you can grab just a few bites at a time!
- Storage: Keep the frozen bites in an airtight container or zip-lock bag once frozen to prevent freezer burn and keep them tasting fresh.
- Serving: Enjoy straight from the freezer for a refreshing snack, or leave them out for a few minutes if you prefer a softer texture.
Swaps
Mango: Use pineapple or peaches for a different tropical twist — both freeze well and pair beautifully with yoghurt and coconut.
Greek yoghurt: Swap with coconut yoghurt for a dairy-free, vegan option that keeps the creaminess and pairs perfectly with the tropical flavours.
Shredded coconut: Use desiccated coconut or even chopped nuts (like pistachios or almonds) for added crunch and a different texture.
Honey: Use maple syrup or agave nectar to keep it vegan or adjust sweetness to taste.
Storage
Fridge: These frozen mango bites are best kept in the freezer but can be thawed in the fridge for 10–15 minutes if you prefer a softer texture.
Freezer: Store in an airtight container or freezer-safe bag for up to 1 month. Lay them out on baking paper to avoid sticking before freezing, so you can easily grab a handful whenever you want a healthy frozen treat.
