You know when you just want something sweet after dinner, but don’t want to go overboard? These healthy sweet bites are the perfect solution. Made with just 5 wholesome ingredients, they come together in minutes and hit that chocolatey, chewy, coconutty spot. I love making these when I want a treat that still feels nourishing—and because they’re made in a silicone ice cube tray, the portions are just right. They’re great for portion control and even better for gut health, thanks to the fibre-rich oats, dates, and almonds.
Whether you’re prepping snacks for the week or need a speedy dessert, this one’s a regular in my fridge. Melt some dark chocolate, drizzle over the top, and you’ve got yourself a little sweet magic.

Ways To Enjoy It
These bites are perfect when you’re craving something sweet but still want to keep it healthy. Here are a few of my favourite ways to enjoy them:
- As a post-dinner treat: One or two with a cup of herbal tea makes the perfect little dessert.
- Pre- or post-workout snack: The dates and oats give a natural energy boost, while the almonds add some protein.
- Topped on breakfast: Crumble over porridge, yoghurt, or a smoothie bowl for a sweet crunch.
- With your afternoon coffee: Great for that 3pm slump when you need a pick-me-up.
- Gift idea: Pack a few into a little jar or box for a thoughtful, homemade treat.
Tips
- Use a silicone ice cube tray: Rigid trays won’t work. You need a flexible silicone mould so the bites pop out easily once set.
- Soften your dates if dry: If your medjool dates feel tough or dry, soak them in warm water for 5–10 minutes. This helps them blend better and gives the bites the perfect chewy texture.
- Don’t over-blend: You want the mixture to hold together, but still have some texture. Pulse in short bursts and stop once it forms a sticky dough.
- Press firmly into the mould: Use the back of a spoon to press the mixture down well into each cube. This helps them hold together once chilled.
- Toppings are optional but fun: I used seeds and flaky salt, but you can add anything—shredded coconut, sesame seeds, chopped nuts, or nothing at all!
- Let them rest before eating: If frozen, let the bites sit at room temp for 5 minutes before eating so the texture softens slightly.
Swaps
Oats: Use gluten-free oats if you have a dietary need.
Almonds: Cashews or walnuts work well in place of almonds.
Shredded coconut: You can skip it or use ground flaxseed for a nutty texture.
Medjool dates: Other soft dates work, or use soaked dried figs or prunes.
Dark chocolate: I recommend 70%+ dark chocolate, but any chocolate you enjoy will work.
Storage
Fridge: Store in an airtight container for up to 1 week.
Freezer: Freeze for up to 2 months. Let them sit at room temp for 5 minutes before enjoying.
