If you’re looking for a vegan option, just swap the honey for maple syrup, and if peanut butter isn’t your favourite, this recipe works just as well with almond, cashew, or any nut butter you love.

- Use very ripe bananas (with brown spots) for natural sweetness and a smoother texture.
- For a creamier fudge, you can blend the mixture in a food processor instead of mashing by hand.
- Silicone moulds work best as they make it super easy to pop out the fudge once frozen.

Swaps
Peanut butter: Swap with almond butter, cashew butter, or sunflower seed butter for a different flavour or to suit allergies
Coconut oil: You can swap the coconut oil with unsalted butter if you’re not aiming for a plant-based version. Just melt the butter before mixing it in—use the same quantity (20ml) as the coconut oil.
Storage
In the freezer: Keep the fudge in an airtight container for up to 2 months. Because it’s made with bananas and no stabilisers, it needs to stay frozen to hold its shape.
To serve: Take out as many pieces as you like and let them sit at room temperature for about 5 minutes before eating—just enough to soften slightly without melting.

3-Ingredient Peanut Butter Fudge
Ingredients
- 250 g peanut butter
- 50 g coconut oil melted
- 3 tbsp maple syrup or honey
Instructions
- In a bowl add all the ingredients and mix until well incorporate
- In a freezer proof container pour the mix, make sure to add some baking paper at the bottom to make it very easy to remove later.
- Freeze for ~1 hour (or until solid) and once solid, cut into slices. (You might need to let it defrost for a few minutes before biting into it)
