If you’re anything like me, when the weather finally heats up in the UK, all you want are fresh, light, cold meals. That’s where this Watermelon & Feta Salad comes in — it’s refreshing, super easy to make, and a little bit fancy (without actually doing much!). The combination might sound a bit unusual at first, but trust me, sweet watermelon, salty feta, and prosciutto work like magic together. Add some mint and balsamic vinegar and you’ve got a summer salad that hits all the right notes.
Not only that, this salad is also full of plants, hydration, and natural electrolytes, making it a fantastic option for gut health and warm-weather nutrition. Plus, there’s no cooking required — just chop, assemble, and enjoy!
Watermelon + Feta Combo
The combination of feta and watermelon might sound unusual at first, but it’s a match made in summer salad heaven. The sweet, juicy watermelon contrasts beautifully with the salty, tangy feta, creating that perfect sweet-savoury balance we all crave. Watermelon brings hydration and natural sweetness, while feta adds creaminess and a punch of flavour. When paired with fresh mint and a drizzle of balsamic, this combo becomes incredibly refreshing and full of character. It’s a simple yet clever mix of textures and flavours that turns humble ingredients into something really special.
Ways To Enjoy It
As a refreshing side dish: Perfect alongside grilled meats or fish at a barbecue or summer picnic.
Make it a main: Add cooked quinoa, couscous or lentils to turn it into a more filling salad.
As skewers: Thread watermelon, feta, mint, and prosciutto onto small skewers for a fun and portable party bite.
With added crunch: Top it with roasted almonds, pumpkin seeds, or croutons just before serving for extra texture.
Tips
- Scoop with a teaspoon: If you don’t have a melon baller, a metal measuring teaspoon works beautifully.
- Chill your watermelon: This salad is best served cold, so prep your watermelon ahead and keep it in the fridge.
- Use good-quality balsamic: It ties the whole dish together with sweetness and acidity.
Swaps
Feta: plant-based feta alternatives work well. Choose one that has a crumbly texture for the best result.
Prosciutto: Leave it out for a vegetarian version or swap with grilled halloumi or chickpeas for extra protein.
Mint: Basil is a great alternative for a fresh, Mediterranean flavour.
Balsamic vinegar: Try a drizzle of honey and lemon juice if you don’t have balsamic.
Storage
Fridge: Store leftovers in an airtight container in the fridge for up to 1 day, though it’s best enjoyed fresh.
Freezer: Not suitable for freezing.
