No Lolly Mould? No Problem
You can use small yoghurt pots, silicone cupcake moulds, or even ice cube trays. Just add a wooden stick or teaspoon before freezing. I used classic lolly moulds for that perfect ice lolly shape, but anything freezer-safe will work just fine!

Tips
- Chop Small for Better Layers: The smaller the fruit pieces, the better they’ll distribute in the mould. It also makes it easier to fill in all the gaps with coconut water.
- Layer Carefully: Add fruit one layer at a time for a pretty rainbow effect. I went for strawberries, mango, then kiwi – but feel free to mix it up.
- Don’t Press Down: It might be tempting to compact the fruit, but it’s better to leave some air gaps – this way, the coconut water can flow through and hold everything together.
- Slow Pour: Pour the coconut water slowly to avoid air bubbles and make sure every gap is filled.
- Freeze Overnight: Let them set completely for the best texture – I always leave them overnight.
Swaps
Strawberries: Raspberries or chopped cherries work well as an alternative with similar sweetness and colour.
Mango: Use peach or papaya for a tropical twist with soft texture and natural sweetness.
Kiwi: Try golden kiwi or thinly sliced cucumber for a less sweet but refreshing option.
Coconut water: 100% fruit juice like apple or orange works too and adds a fruity flavour boost.
Fruit mix: Blueberries, pineapple or grapes are great additions for colour and variety – just chop them small.
Storage
Freezer: Keep in the freezer for up to 1 month. Once frozen, transfer the lollies to a reusable freezer bag or container to save space in your freezer and avoid ice build-up.

Fruit Ice Lollies
Ingredients
- 1 kiwi
- 2 slices of mango
- 5-6 strawberries
- ~150ml coconut water*
Instructions
- Chop the fruit really small and layer into the lolly’s mould. I have done the first layer with strawberry, then mango and last the kiwi. (Don’t be tempt by pushing down the fruit, you need some space to fill the gaps with the coconut water).
- Very slowly add the coconut water until it reaches the top, so you know all the gaps inside are filled.
- Add the stick and freeze overnight.
