Ingredients
For the chickpea mix
- 1/2 chickpeas
- 1 tsp oil
- 15 g grated Parmesan
- 1 tbsp mayo
- 1 tbsp sriracha
- handful of basil leaves
- 10 g almonds
- salt to taste
- Squeeze of 1/4 lemon
For the toast
- 1 small avocado
- 6 sundried tomatoes
- toasted sourdough bread

- Add all the chickpea mix ingredients into a bowl and blend, partially and roughly(or add into a blender). *
- Mash the avocado on a toasted bread and add the chickpea mix.
- To finish off drizzle some more extra virgin olive oil.
