Ingredients
  

For the chickpea mix

  • 1/2 chickpeas
  • 1 tsp oil
  • 15 g grated Parmesan
  • 1 tbsp mayo
  • 1 tbsp sriracha
  • handful of basil leaves
  • 10 g almonds
  • salt to taste
  • Squeeze of 1/4 lemon

For the toast

  • 1 small avocado
  • 6 sundried tomatoes
  • toasted sourdough bread

Instructions
 

  • Add all the chickpea mix ingredients into a bowl and blend, partially and roughly(or add into a blender). *
  • Mash the avocado on a toasted bread and add the chickpea mix.
  • To finish off drizzle some more extra virgin olive oil.

*You could get a similar result without a blender, if you go this way mash the chickpeas and roughly chop the rest of the ingredients, then add to a bowl and mix (I find the blender much quicker).
