Savoury muffins are the ultimate combination of simplicity and satisfaction. These cottage cheese muffins deliver a boost of protein in every bite, making them perfect for breakfast, snacks, or meal prep. With just six ingredients, they’re as easy to make as they are delicious.
The star of this recipe is cottage cheese, which adds creaminess and keeps the muffins light and moist. Oats and eggs provide structure and an extra protein punch, while cheddar or feta adds a rich, savoury flavour. A handful of spinach adds freshness, and baking powder ensures the muffins rise beautifully.
In less than 30 minutes, you’ll have a batch of fluffy, golden muffins that are equally delicious warm or straight from the fridge. They’re great on their own or paired with a salad for a light and wholesome meal. Simple, nourishing, and satisfying—these muffins are bound to become a go-to.
Cottage Cheese: Why the Hype?
It’s not just a passing trend—cottage cheese is packed with protein, low in calories, and rich in nutrients like calcium and B12 this is why I absolutely love to sneak it in my recipes! It’s creamy, versatile, and can be used in both sweet and savoury dishes. Plus, with around 10g of protein per 100g, it helps keep you full and fuels your muscles. Affordable, nutritious, and easy to work with—no wonder it’s gaining so much love. Whether in muffins, pancakes, or on its own, it’s a go-to for feeling good inside and out!
Tips
- Don’t over-blend the mixture—pulse just until smooth to avoid dense muffins.
- Let them cool before removing from the cases—they firm up as they rest.
- These muffins keep well in the fridge for up to 3 days. Perfect for batch prep!
Swaps
Cheddar: any hard cheese like parmesan, red Leicester or gruyère.
Chives: spring onion, parsley, basil or even cooked spinach.
Storage
Let the muffins cool completely, then store them in an airtight container in the fridge for up to 3 days. They’re great cold or gently reheated.
