These bars are one of my absolute favourite! They are an easy, no-bake treat that’s both healthy and satisfying. With just peanuts, raisins, and dark chocolate, this recipe is packed with wholesome ingredients and comes together in minutes.
With healthy fats from peanuts, fibre from raisins, and antioxidants from dark chocolate, they provide steady energy and support heart and muscle health. Made with just 3 ingredients, these bars are gluten-free and vegan (with the right chocolate), making them a perfect snack for a balanced lifestyle. They’re easy to make, quick to freeze, and satisfy your sweet cravings without added sugars or processed ingredients.
The combination of salted peanuts and the natural sweetness of raisins creates the perfect balance, while dark chocolate adds a rich, indulgent touch. Simply blitz everything in a food processor until roughly combined, press into a container, and freeze for a few minutes until solid. Once ready, cut into bars and enjoy a delicious snack that’s gluten-free, vegan (if using vegan chocolate), and full of flavour.

Tips
- I used roasted and salted peanuts (the kind you’d buy as a nibble!) because I love the contrast of salty and sweet, and the nutty flavour from the roasting complements these bars perfectly. If you prefer, use unsalted peanuts instead to control the amount of salt in the recipe.
- There’s no need to melt the chocolate! Just chop it finely, and when you mix it in the food processor, the speed will naturally melt the chocolate. If a few small pieces remain, even better—they’ll add a delightful texture to the bars!
- One of the great things about this recipe is that you can easily adjust the consistency to your taste. With my food processor, I only blitz the mixture enough to combine everything and create a smoother texture, but I still leave some bits for extra crunch and texture. Feel free to blend it longer if you prefer a smoother bar, or keep it chunky for a bit of bite!
- Use a sharp knife to cut the bars after they’ve fully set to avoid squishing them.
Swaps
Peanuts: Swap for any nut of your choice: almonds, cashews, or hazelnuts work great for a different flavour and texture.
Raisins: Use dates for a richer sweetness and added fibre. Dried cranberries or dried apricots could work if you like a tangier taste.
Dark chocolate: I have used 70% Dark Chocolate but you could swap with vegan dark chocolate for a dairy-free version or choose a sweeter dark chocolate, 55-60%, if you are not use to dark chocolate.
Storage
In the fridge: Store the bars in an airtight container for up to 5 days/1 week. This will keep them fresh and help maintain their texture.
In the freezer: For longer storage, freeze the bars in an airtight container or ziplock bag for up to 2-3 months. Simply take them out of the freezer and let them thaw for a few minutes before enjoying, or eat them straight from the freezer for a colder treat!

- 120 g peanuts
- 150 g raisins
- 60 g dark chocolate roughly chopped (I used 70%)
Instructions
