Tips
- Use ripe bananas: The riper, the better—brown spots mean extra sweetness and better texture.
- Mash directly in the tin: Saves on washing up and gets everything going faster.
- Lightly oil the baking dish: I didn’t do this, my baked oats were pretty easy to remove with a spatula but oiling makes removal much easier.
- Line your tin: If not using a non-stick tin, line with baking paper for easy removal.
- Cool completely: Let it cool fully before slicing so the texture sets properly.
- Portion it out: Cut into 4 slices and store in individual containers for a grab-and-go breakfast.
- Serve with yogurt: Adds protein and creaminess—makes it more filling and balanced.
Swaps
Milk: Any unsweetened plant-based milk works—almond, oat, or coconut drink.
Honey: Use maple syrup or date syrup for a vegan option.
Chocolate chips: Swap with cacao nibs, chopped nuts, or dried fruit.

- 3 bananas
- 3 medium eggs
- 60 ml milk, I used unsweetened soya
- 1 tsp baking powder
- 1 tsp cinnamon
- 150 g rolled oats
- 40 g honey
Optional toppings
- chocolate chips
- banana, sliced
Instructions
- You can use your baking tin as a bowl: start by mashing the bananas with a fork until it turns into purée. I used a 23 × 23 cm (9 × 9 inch) square baking tray.
- Add the rest of the ingredients: eggs, milk, cinnamon, baking powder, honey and oats.
- Mix well. Add optional toppings (I used chocolate chips)
- Bake in the oven at 180°C (350°F) for 15–20 minutes.
- Let it cool down completely before serving.
Your site is really great. I love that you can choose between US and metric sizes. I’m always lost when only metric measurements are listed on recipes. The only other info that I would find very helpful if pan sizes were included. I’m just not great at baking and can ruin a recipe easily by using the incorrect size and then either over-baking or not cooked. Thanks for such a great size.
