If you’re searching for the ultimate holiday appetiser that’s both impressive and effortless, look no further. These feta and honey crunch bites inspired by Carolina Gelen are pure magic — perfectly balancing crunchy, savoury, and sweet flavours in every bite. With just four simple ingredients, this recipe is proof that incredible food doesn’t need to be complicated.
The flaky phyllo pastry crisps beautifully in the oven while wrapping around salty, creamy feta cubes, creating a delightful contrast of textures. Then, a drizzle of golden honey adds a luscious sweetness that takes these bites from delicious to downright addictive.
What I love most is how quick and easy they are to prepare — just a few minutes of assembly and 5 minutes baking, and you have a crowd-pleasing snack ready to go. Whether you’re entertaining guests, need a festive treat, or simply want a quick, satisfying snack, these bites deliver every time.
Perfect for the holidays or any day you want to feel a little fancy without the fuss. Give them a try and I promise you’ll be hooked.

Ways To Enjoy
Party Starter: Serve them warm as a crowd-pleasing appetizer at holiday gatherings or dinner parties.
Snack Time: Enjoy them as a quick, satisfying snack with a cup of tea or coffee.
Salad Topper: Chop and sprinkle over your favourite leafy greens for an extra crunch and flavour boost.
Cheese Board: Add them to a festive cheese board alongside olives, nuts, and fresh fruit.
Tips
- Work quickly with phyllo: Phyllo dries out fast so keep the sheets covered with a damp cloth while assembling.
- Brush generously: Make sure to brush each phyllo layer with melted butter for maximum crispiness and golden colour.
- Fold tightly: Wrap the feta cubes snugly to avoid the cheese melting out during baking.
- Honey drizzle: Add the honey only after the bites have cooled slightly to keep the pastry crisp.
- Sesame seeds: Optional but they add a nice nutty crunch and make your bites look pretty for guests.
Swaps
Feta: Try halloumi cubes for a firmer texture that holds up well in the oven.
Phyllo pastry: Use spring roll wrappers for a different twist—just reduce the baking time and watch closely.
Butter: Swap with olive oil for a dairy-free option, though the texture will be a bit different.
Honey: Maple syrup works well for a vegan alternative with a similar sweetness.
Storage
Fridge: Store cooled bites in an airtight container for up to 2 days. Reheat in a hot oven or air fryer to regain crispiness.
Freezer: Freeze uncooked wrapped bites for up to 1 month. Bake directly from frozen, adding a couple of extra minutes to the cooking time.
