Rice Krispy treats are a beloved classic snack, originally made with marshmallows and butter, perfect for a quick sweet fix. This healthier version swaps out the marshmallows for natural peanut butter and maple syrup, making it a more wholesome and naturally sweetened treat. With just three simple ingredients, these peanut butter rice krispy treats come together in minutes and deliver that perfect satisfying crunch.
Whether you need a last-minute dessert or a handy snack to keep you energised, these gluten-free, no-bake squares won’t disappoint. They also don’t require any special equipment or baking skills, so it is an easy and accessible treat for everyone.

Tips
- Use smooth peanut butter for easier mixing and a creamier coating on the rice crisps.
- Microwave the peanut butter and maple syrup just enough to soften, don’t overheat or it can get too runny.
- Mix the rice crisps gently to avoid crushing them and keep the crunch intact.
- Press the mixture firmly into the tin to ensure the squares hold together well after freezing.
- Freeze instead of refrigerate to get the best crunch and easier cutting.
- Store leftovers in the freezer for maximum freshness and crunch.
Swaps
Peanut butter: Use almond butter or cashew butter for a milder nutty flavour, or sunflower seed butter for a nut-free option.
Maple syrup: Honey or agave nectar can be swapped in but may alter the flavour slightly.
Rice Krispies: I used a classic Kellogg’s Rice Krispies for this recipe, because are easy to find at the supermarket. You can also use puffed rice or crumbled rice cakes; texture may vary slightly but still delicious. Use gluten-free rice cereal if needed, or try puffed quinoa or puffed millet for a different crunch and flavour.
Storage
Fridge: Store in an airtight container for up to 5 days. The treats may soften slightly but will still be tasty.
Freezer: Store in an airtight container or wrapped in baking parchment for up to 1 month. Freeze helps keep the treats crunchy and makes cutting easier. This is my preferred storage solution for these delicious treats.
