Instructions
Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
Spoon or drizzle about 6 teaspoons of honey onto the paper, spacing them well apart.
Sprinkle a little cinnamon over each pool of honey, then layer 4–5 thin apple slices on top. Drizzle another teaspoon of honey over the apples.
Place a rectangle of puff pastry over each apple stack and gently press down the edges with a fork to seal.
Brush the tops with egg yolk for a golden finish, then bake for about 12 minutes, until puffed and beautifully golden.
Allow to cool slightly, then dust with icing sugar before serving.
