Preheat the oven to 180°C / 350°F and line a loaf tin with baking paper (I used a small tin: 20 x 10 cm / 8 x 4 in).
In a bowl add the wet ingredients and mix.
In the same bowl add the dry ingredients and mix until well incorporate (don’t overmix and follow the next step straight away for the best result).
Pour the batter into the prepared tin and bake at 180°C / 350°F for 50 minutes. Cover with foil for the last 10 minutes to prevent the top from burning.
Let it cool down completely before cutting into slices.
