Healthy Hot Cross Muffins

Ingredients
  

  • 70 g oats
  • 80 g almond butter
  • 50 g raisins +orange peel
  • 1 tsp mixed spice*
  • 1 egg
  • 1 ripe banana
  • 1 tsp baking powder

Topping

  • 40 g cream cheese
  • 1 tsp honey

Instructions
 

  • Add all the ingredients to a food processor and blitz for just 5 secs and again for another 5-10 secs. All you need is for the ingredients to be combined together into a batter (see consistency in the video).
  • Transfer to a muffin tin and bake (I have put some muffin cases in it).
  • Bake for 14-15 minutes at 180C.
  • Meantime make the frosting: simply combined cream cheese and honey into a bowl and mix.
  • I have used a piping bag to make neat lines bit you could use a small small or a spoon.
  • Once muffins are ready, let them cool down completely and the add the frosting.

Notes

*you can make it yourself or buy it at the supermarket: it is usually a mix of cinnamon, nutmeg, cloves powders. But if you dont’t have it don’t worry, use cinnamon only it will do just fine.
