Healthy Almond Energy Balls (Easy 5-Ingredients Snack)

Ingredients
  

  • 140 g soft Medjool dates
  • 1 tbsp chia seeds
  • 60 g porridge oats
  • 80 g almond butter, ⅓ cup
  • 20 g dark chocolate, 70%, finely chopped

Optional

  • ½ tsp vanilla extract, optional
  • 1 tbsp water, optional, if needed

Instructions
 

  • Add the dates, chia seeds, oats, almond butter and vanilla extract (if using) to a food processor.
  • Blitz until the mixture comes together into a sticky dough.
  • If the mixture feels a little dry, add 1 tablespoon of water and blitz again.
  • Transfer the mixture to a bowl and stir through the chopped dark chocolate.
  • Roll into 10-12 balls.
  • Place in the freezer for 15 minutes to firm up.
  • Store in the fridge and enjoy whenever you need a healthy snack.
