Instructions
Add the dates, chia seeds, oats, almond butter and vanilla extract (if using) to a food processor.
Blitz until the mixture comes together into a sticky dough.
If the mixture feels a little dry, add 1 tablespoon of water and blitz again.
Transfer the mixture to a bowl and stir through the chopped dark chocolate.
Roll into 10-12 balls.
Place in the freezer for 15 minutes to firm up.
Store in the fridge and enjoy whenever you need a healthy snack.
