Apple Bircher Muesli

Ingredients
 
 

  • 1 apple
  • 120 ml milk of choice, I used soya milk
  • 50 g yoghurt
  • 1 tsp cinnamon
  • 50 g oats
  • a touch lemon, zest and juice

Instructions
 

  • Grate the apple straight into a bowl. Add the oats, yoghurt, milk, cinnamon, plus a little lemon zest and a squeeze of lemon juice.
  • Stir really well until everything is evenly mixed and the oats look coated and creamy.
  • Taste and adjust if needed. Add a tiny extra pinch of cinnamon or lemon zest if you want it brighter.
  • Top with whatever you fancy, like sliced apple, nuts, seeds or dried fruit.
  • Eat straight away, or cover and chill overnight for a thicker, more classic bircher texture.
